I'm looking for a preexisting software solution, but atm it looks like our best bet is to get a bunch of people with splitter cables to link their line in and line out ports and then be in multiple conferences simultaneously.
The solution is called ventrilo, I tell you.
Jpez's has it. Vent can support multiple channels (classrooms) and has various option such as message of the day/chatroom.

(ventrilo doesn't have a linux client, just a linux server - teamspeak has a linux server and client)
